Domaine Tour Trencavel 2002


Deep ruby core and tight, garnet rim showing both maturity and youthfulness. Dry red fruit; ripe, dark fruit(cherries and plums) in palate. Finish give shades of peppery spicy, animal tones, Provencal herbs, and dark chocolate. A really cool 'maritime' palate- soft, with good structure (textured by melted and ample tannins and acidities) and balance.

Fruit length is just fine and just right. Strong mid-palate. Best with Shanghai Belly Pork and Pot Beef cubes. Abv at 13.5% only, which is pretty cool forAppellation Minervois.

Composition is Syrah (60 %), Carignan (27%) and Grenache (13%). Production is low at 35 Hl/ha. Manuel harvest; Carbonic maceration on Syrah and Grenache; traditional maceration on Carignan; daily batonnage...., all these found traces in palate.

The soils are composed of compact limestones and calcareous marls. We cannot exactly be ascertained about this Cuvee; we believe this is a mixed version of various AC and above cuvees from Sebatian and Anne Fabrie.
