Il Follo Rose Brut NV, Spumante Rosato
Rose gold; rose petal colour. This sparkling wine gets you to experience from a complete wine, opening with slightly oxidative complexities, leading onto light and fine bubbles, a touch of rose wine, and eventually a mousseux sweetish finish. Aromas of sweet red berries, peaches, citrus, ginger dominate the slightly chalky palate. It tastes pure, lightly bubbled with less than an energetic bead, yet firm and mid-bodied in the mouth. Best to taste with smoked ham on Christmas day. To serve cold enough like below 8°C as residual sugar is10 g/l and alcohol level at 11.5%.
The grapes are 85% Glera and 15% Cabernet Sauvignon rosée. and hence it has a tannic structure. The production area is the Treviso hill. The soil is from hilly clayey, calcareous; Climate is the cool Mediterranean. Vinification is in white/rosé with soft pressing. Maximum yield 70 and only 30,000 bottles made.
The wine making process is Charmant method. starting from the initial vinification to form a dry rose wine. Then, with the Charmat method it is the fermentation of the first wine in an autoclave, which integrated the carbon dioxide, developed during the fermentation. Bubbles are fine, still dense and are slower than we expected. The winemaker is Luca Follador who represents the younger generation at this estate.
