Chateau Les Hommes Cheval Blanc 1998, Cotes de Bourg

Medium ruby with mahogany tints. Medium garnet rim. Some depths and just in time, maybe.

On the nose, there is some dry red fruit, follow by coffee, mocha, spice, vanilla, moist herbal and mint. These apparent complexities come from the extended bottle ageing, and indeed some Cotes de Bourgs are mostly designed for longer term ageing of 5 to 20 years. And if you are for old wines, you may find the peculiar feel of the excitement of what's next on palate, which is congruent with the round, dry fruited palate followed by with melted and chalky tannins leading to a light- medium finish. Of course, this is an old wine.

Diversity from mixed of 5 grapes: 60% Merlot, 20% Cabernet Sauvignon10%, Cabernet Franc, Petit Verdot 5%, Malbec 5%. The three soil types mixed sand, clay, clay-limestone add to the palate. Grapes are 100% destemmed, stainless steel fermentation and 18 moths' oak and bottle ageing. Lower temperature fermentation for 'one time'(they call Cardigan) for extraction of colour and taste.

In our view, this wine is very flexible with food. However, the best food to go with this aged wine is good cheeses, aged ham, dried mullet roe and dry meat(roast pork).
