Castello Soave Classico 2013

The traditionally made 2013 Castello Soave Classico gives a classic nose and palate profile- white flowers, juniper, peach, melon, citrus zest, mandarins- leading to soft minerality. With 5 to 6 years bottle ageing, the fruit now gives way to tertiary tones of marmalade, honey, beeswax, and preserved lemon. Fifty thousand bottles made of 90% Garganega giving fruit profile and 10% Trebbiano di Soave grapes giving structure andty. Lightish body(ABV 12,5) with a medium finish.

The vineyards are on Hills of the Soave Classico region, facing Soave and the Alpone valley between Monteforte d’Alpone and Brognoligo. They situate on 200/250 meters above sea level. Hence, it is generous on the palate with some tension from the salinity. This taste is augmented by the texture gained from the 3 to 4 months Sur Lie in the making Process.

Soave drinks well on ageing- this might be the fad amongst better known wine writers influenced by negoc with older stock on hand. But most makers are small and has limited money for buying his stock for storing. Hence it is rare to exceptional bottles this old with 6 to 7 years behind. Really nice, with shell food and lighter parma ham, nuts, almonds.
